Soft Crab w/ Harissa Sauce over Herbed Faro

Faro is an ancient wheat grain with a chew texture and mellow nuttiness. Pair this with a Soft Sell Crab and you have a great combination of both smooth and crunchy textures.

Ingredients
  • 4 each Handy Soft Crab (Jumbo), Thawed
  • 1 Cup All-Purpose Flour
  • 1 Cup Cornmeal – Coarse
  • Dash Sea Salt / Black Pepper / Smoked Paprika / Cumin

Sauce

  • 1 Cup Greek Yogurt (Plain)
  • 2 TBSP Harissa Sauce
  • 1 TBSP Honey
  • 1 TBSP Mint, Fresh – Rough Chopped
  • 1 TSP Lemon Juice, fresh squeezed
  • 1 TSP Olive Oil, extra virgin
  • Dash Sea Salt

Faro

  • 2 Cups Faro (cooked)
  • 2 TBSP Olive Oil, Extra Virgin
  • 1/4 TSP Roasted Garlic, minced
  • 1 TBSP Parsley, Fresh – Rough Chopped
  • 1 TBSP Cilantro, Fresh – Rough Chopped
  • Dash Sea Salt / Black Pepper
  1. Pat dry crabs and dredge in the cornmeal / flour mixture until coated…shake off excess
  2. Heat oil to 350°F in a heavy bottomed pot / fryer / Dutch oven
  3. Add crabs to the oil, fry 2 minutes, flip, and repeat process
  4. Remove from the oil onto a rack or paper towel-lined sheet pan and let cool for one minute
  5. Mix all Sauce ingredients together and refrigerate until serving
  6. Mix all Faro ingredients together and season to taste with salt and pepper
